Misti Dohi (Sweet Curd)
INGREDIENTS:
Milk - 1/2 litre
Curd - 1 teaspoon
Sugar
METHOD:
Boil milk to reduce water content. Add sugar (or gudr) to taste and stir it till it dissolves.
Remove from heat and let it stand till it is lukewarm.
Take one teaspoon of curd (misti dohi or otherwise bought from a shop) and make it into a smooth paste without lumps.
Add the milk and stir so that the consistency is uniform.
Cover and allow to stand undisturbed for 4/5 hours.
If you use an unglazed earthen container then it sets better because of the absorption of water into the container.

Banana Raita
INGREDIENTS:
2 ripe Bananas (peeled & mashed)
200 gm Yogurt (whipped with 4-5tablespoons water until smooth)
2 dry whole Red Chillies (broke into half)
1 teaspoon Cumin seeds (Zeera)
1/2 teaspoon dry roasted Cumin powder
1 large Clove Garlic (finely chopped)
1 teaspoon Chilli powder
Salt and Pepper (to season)
1 teapsoon Butter / Ghee
METHOD:
Season whipped yogurt well with salt and pepper, and set aside.
Heat butter (or ghee) in a deep frying pan (kadai), add garlic, cumin seeds and red chillies and saute until the chillies start to turn black.
Add bananas, 1//2 the red chilli powder and mix well. Lower heat, pour in yogurt and mix well, simmer for a few minutes
Check seasoning.
Remove from the fire and sprinkle with remaining red chilli powder and ground cumin powder.
Serve hot or cold with pullaos and biryanis.
